Ingredients

  • 1 avocado
  • ¼ cup red wine vinegar
  • 2 tablespoons lime juice
  • 1 clove garlic
  • 1 ounce dill herb
  • 1 ounce parsley
  • 2 jalapenos
  • ¾ cup olive oil
  • 8 ounces lettuce
  • 1 large tomato
  • 1 cup cucumber
  • ½ cup roasted red peppers
  • ½ cup banana peppers
  • ½ cup chickpeas
  • ½ teaspoon salt
  • ½ teaspoon ground pepper

Instructions

  1. Combine dressing ingredients in a blender and blend until smooth and creamy. Set aside and make salad.
  2. Combine all salad ingredients in a bowl, add vinaigrette and mix until all ingredients are combined.
