No Cook Chopped Salad & Jalapeno-Lime Avocado Vinaigrette
      Topped with a spicy vinaigrette dressing, plus crunchy iceberg lettuce, and add-ins like cucumbers, banana peppers, and chickpeas, make this salad both healthy and filling.
Ingredients
- 1 avocado
 - ¼ cup red wine vinegar
 - 2 tablespoons lime juice
 - 1 clove garlic
 - 1 ounce dill herb
 - 1 ounce parsley
 - 2 jalapenos
 - ¾ cup olive oil
 - 8 ounces lettuce
 - 1 large tomato
 - 1 cup cucumber
 - ½ cup roasted red peppers
 - ½ cup banana peppers
 - ½ cup chickpeas
 - ½ teaspoon salt
 - ½ teaspoon ground pepper
 
Instructions
- Combine dressing ingredients in a blender and blend until smooth and creamy. Set aside and make salad.
 - Combine all salad ingredients in a bowl, add vinaigrette and mix until all ingredients are combined.
