Veggie Toast with Cheese

Toast with vegetables and cheese on it.

Ingredients:

  • 4 slices thick whole wheat bread
  • ¼ cup onions
  • ½ cup bell peppers
  • ½ cup zucchini
  • ¼ cup mushroom
  • ¼ cup corn
  • 1 tbsp olive oil
  • ¼ cup low-sodium parmesan
  • ½ cup low-fat cheddar cheese
  • ½ cup unsalted tomato sauce

Directions:

  1. Preheat oven to 350 degrees.
  2. Roughly chop veggies of your choice: we used onion, bell pepper, mushroom, and zucchini.
  3. Drizzle olive oil over slices of bread.
  4. Spread unsalted pizza sauce over slices of bread.
  5. Add vegetables and cheeses to the slices of bread, place on a baking sheet, and bake for 12-15 minutes.
  6. Remove from oven and enjoy!
