Veggie Toast with Cheese
Ingredients:
- 4 slices thick whole wheat bread
- ¼ cup onions
- ½ cup bell peppers
- ½ cup zucchini
- ¼ cup mushroom
- ¼ cup corn
- 1 tbsp olive oil
- ¼ cup low-sodium parmesan
- ½ cup low-fat cheddar cheese
- ½ cup unsalted tomato sauce
Directions:
- Preheat oven to 350 degrees.
- Roughly chop veggies of your choice: we used onion, bell pepper, mushroom, and zucchini.
- Drizzle olive oil over slices of bread.
- Spread unsalted pizza sauce over slices of bread.
- Add vegetables and cheeses to the slices of bread, place on a baking sheet, and bake for 12-15 minutes.
- Remove from oven and enjoy!
