Oven Roasted Eggplant

Diced and Oven Roasted Eggplant

Ingredients:

  • 1 large eggplant
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon of pepper

Directions:

  1. Preheat the oven to 425.
  2. Dice eggplants into small cubes.
  3. Place the cubed eggplant on a baking pan and sprinkle with olive oil, salt, and pepper.
  4. Roast for 25-35 minutes or until tender and brown around the edges.
