Oven Roasted Eggplant
Ingredients:
- 1 large eggplant
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon of pepper
Directions:
- Preheat the oven to 425.
- Dice eggplants into small cubes.
- Place the cubed eggplant on a baking pan and sprinkle with olive oil, salt, and pepper.
- Roast for 25-35 minutes or until tender and brown around the edges.
