Wilted Kale Salad with Walnuts
This perfect-for-winter salad is flexible too — so you can switch out the kale and walnuts with whatever greens and nuts you have on hand.
Ingredients
- 1 bunch kale
- ¼ cup olive oil
- 2 cups red onion
- ½ teaspoon whole cumin seeds
- 1 clove garlic
- ½ teaspoon salt
- 1 cup walnuts
- 1 apple
- 2 tablespoons lemon juice
- Black pepper
Instructions
- Rinse the kale. Cut or tear out the stems. Slice the leaves thinly and place in a large bowl.
- Heat the olive oil in a medium-sized skillet. Add the onion and sauté over medium heat for about 5 minutes. Add the cumin seeds, garlic, salt, and walnuts to the skillet with the onions. Sauté another couple of minutes.
- Add the hot onion and walnut mixture to the kale, being sure to get all of the oil out of the pan. Toss the kale and onion mixture which will wilt the kale some. Add the diced apple, lemon juice, and ground pepper to taste and toss again. Serve immediately.
