Rainbow Greek Salad
      This easy, healthy salad can be chilled overnight or made ahead of time. Mix it up by swapping in your favorite veggies!
Ingredients
- 2 medium cucumbers
 - 3 cups cherry tomatoes
 - 2 bell peppers
 - ¼ cup diced red onion
 - 1 can white northern beans
 - 1 lemon
 - ¼ cup fresh parsley
 - ¼ teaspoon salt
 - ½ teaspoon dried oregano
 - 3 tablespoons olive oil
 - 1 tablespoon red wine vinegar
 
Instructions
Combine all ingredients in a large bowl and stir until evenly mixed. Cover and chill in the refrigerator for 2-3 hours or overnight. Serve cold as a main or side dish!
