Ingredients

  • ¼ cup olive oil
  • 1 tsp red wine vinegar
  • Juice from ½ lemon
  • 1 tsp Dijon mustard
  • Salt
  • Pepper
  • 4 medium carrots
  • Fresh parsley

Instructions

  1. Make the dressing: In a mason jar (or using a bowl and whisk), combine the olive oil, vinegar, lemon juice, mustard, and salt and pepper. Shake well to combine. Taste and adjust flavors, if needed.
  2. Make the carrot ribbons: Wash the carrots, cut the ends off, and peel and discard the outer skin. Using a vegetable peeler, peel into long ribbons.
  3. Assemble the salad: In a bowl, stir together the carrot ribbons and as much dressing as you would like. You can save any remaining dressing in the fridge for up to 5 days. Let the salad sit for at least 5 minutes before serving, to allow the carrots to soften. Garnish with fresh parsley and more black pepper, if desired. Enjoy!
