Wilted Kale Salad with Walnuts

Yield: 4-6 servings

Ingredients:

  • 1 bunch Kale
  • ¼ cup Olive oil
  • 2 cups Red onion, sliced thin
  • ½ tsp Whole cumin seeds
  • 1 clove Garlic, minced
  • ½ tsp Salt
  • 1 cup Walnuts, chopped and toasted (may use other nuts such as pecans or peanuts)
  • 1 Apple, diced or sliced
  • 2 tbsp Lemon juice
  • Black pepper

Directions:

  1. Rinse the kale. Cut or tear out the stems. Slice the leaves thinly and place in a large bowl.
  2. Heat the olive oil in a medium-sized skillet. Add the onion and sauté over medium heat for about 5 minutes. Add the cumin seeds, garlic, salt, and walnuts to the skillet with the onions. Sauté another couple of minutes.
  3. Add the hot onion and walnut mixture to the kale, being sure to get all of the oil out of the pan. Toss the kale and onion mixture which will wilt the kale some. Add the diced apple, lemon juice, and ground pepper to taste and toss again. Serve immediately.
