Sweet Potato Hash

Ingredients:

  • 2 tablespoons olive oil
  • 2 sweet potatoes, cleaned well and diced (about 3 cups)
  • 1 yellow onion, finely chopped
  • 1 red bell pepper, chopped
  • Salt and pepper, to taste
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder (use more or less depending on your preference of spice)
  • 1 can black beans, drained and rinsed
  • Topping ideas (optional): sliced avocado, fresh lime wedges, cilantro, hot sauce, fried egg

Directions:

  1. Heat olive oil in a large skillet over medium heat. Saute, stirring occasionally, with the lid on for 5 minutes
  2. Add bell peppers, yellow onion, and the seasoning. Saute, stirring occasionally, for 10 minutes, or until the sweet potatoes are almost cooked through and beginning to brown.
  3. Stir in the drained black beans, and saute for 3-5 minutes, or until sweet potatoes are done and beans are warm.
  4. Garnish with toppings of your choice, and enjoy!
