Sweet Potato Hash
Ingredients:
- 2 tablespoons olive oil
- 2 sweet potatoes, cleaned well and diced (about 3 cups)
- 1 yellow onion, finely chopped
- 1 red bell pepper, chopped
- Salt and pepper, to taste
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon chili powder (use more or less depending on your preference of spice)
- 1 can black beans, drained and rinsed
- Topping ideas (optional): sliced avocado, fresh lime wedges, cilantro, hot sauce, fried egg
Directions:
- Heat olive oil in a large skillet over medium heat. Saute, stirring occasionally, with the lid on for 5 minutes
- Add bell peppers, yellow onion, and the seasoning. Saute, stirring occasionally, for 10 minutes, or until the sweet potatoes are almost cooked through and beginning to brown.
- Stir in the drained black beans, and saute for 3-5 minutes, or until sweet potatoes are done and beans are warm.
- Garnish with toppings of your choice, and enjoy!
