No Cook Chopped Salad & Jalapeno-Lime Avocado Vinaigrette

Salad and tomatoes with dressing

Jalapeno-Lime Avocado Vinaigrette

Ingredients:

  • 1 ripe avocado
  • ¼ cup red wine vinegar
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 1 oz. dill herb
  • 1 oz. parsley
  • 1-2 jalapenos, veins and seeds removed
  • salt, to taste
  • fresh ground pepper to taste
  • ¾ cup olive oil

Directions: Combine in a blender and blend until smooth and creamy. Set aside and make salad.

Chopped Salad

Ingredients:

  • 6-8 ounces crispy lettuce
  • 1 medium-large tomatoes chopped
  • 1 cup peeled and diced cucumber
  • ½ cup chopped roasted red peppers ½ cup chopped banana peppers
  • ½ cup chickpeas rinsed and drained
  • ½ teaspoon salt and cracked black pepper to taste

Directions: Combine all ingredients in a bowl, add vinaigrette and mix until all ingredients are combined.
