No Cook Chopped Salad & Jalapeno-Lime Avocado Vinaigrette

Jalapeno-Lime Avocado Vinaigrette
Ingredients:
- 1 ripe avocado
- ¼ cup red wine vinegar
- 2 tablespoons lime juice
- 1 clove garlic, minced
- 1 oz. dill herb
- 1 oz. parsley
- 1-2 jalapenos, veins and seeds removed
- salt, to taste
- fresh ground pepper to taste
- ¾ cup olive oil
Directions: Combine in a blender and blend until smooth and creamy. Set aside and make salad.
Chopped Salad
Ingredients:
- 6-8 ounces crispy lettuce
- 1 medium-large tomatoes chopped
- 1 cup peeled and diced cucumber
- ½ cup chopped roasted red peppers ½ cup chopped banana peppers
- ½ cup chickpeas rinsed and drained
- ½ teaspoon salt and cracked black pepper to taste
Directions: Combine all ingredients in a bowl, add vinaigrette and mix until all ingredients are combined.
