Fresh Spring Rolls
Ingredients:
- 8 rice paper wrappers
- 1 avocado
- ½ cup of bell pepper
- ½ cup of shredded carrots
- ½ cup of shredded red cabbage
- 8 ounces of chicken breast
- ½ cup of lettuce
- ¼ cup of mint
Directions:
- Cut up your vegetables into thin slices or strips.
- Season chicken to preference and pan sear for about 5 minutes per side until fully cooked.
- Dip a rice paper wrapper in lukewarm water for 3 seconds and fill your wrap with all the ingredients, layering them closely together.
- Roll wrap and enjoy!
